This is Frosty, our Christmas cookie jar. During the month of December I try to keep his sweet tummy full. He's been hungry for a week now, but is nice and fattened up now. Today we made our first batch of Christmas cookies. This week we made Snow Caps. It was a first for me, but according to Billy, they are sooo good that they will be in the regular cookie rotation around here from now on!
The original recipe is from Martha Stewart, but I changed it up a bit b/c I didn't want the coffee flavor to be too strong for the kids. If you are a coffee lover are plan to keep the cookies for yourself, here's the original recipe.
Chocolate Espresso Snow caps
1/2 c. flour
1/2 c. unsweetened cocoa powder
2 1 /2 tsp coffee (I made 2 batches and just used one tsp for the kiddos)
1 tsp. baking powder
1/8 tsp. salt
4 Tbs. butter, room temp.
2/3 c. packed brown sugar
4 oz. semi sweet chocolate chips
1 Tbs. milk
Melt chocolate chips over boiling water, stirring till melted. Take off and cool.
Whisk flour, cocoa, coffee, bkg. powder, and salt.
In separate bowl beat butter and sugar. Add egg and cooled chocolate.
Slowly add dry ingredients.
Add milk and spoon onto plastic wrap. Wrap and chill in refrigerator for 30 minutes.
Preheat oven to 350 degrees.
Place on cookie sheet 2 inches apart and bake 12-14 minutes.
And there's no need to feel guilty! Make a batch...or 2 and keep a few for your family and wrap the others up for a special treat to give someone else! It is the season for sharing after all! You can let your kids pick the lucky recipients each week! Hope you enjoy! :)
