Oven Fried Fish
*I'm not a big fish eater, but my family likes it and it's so good for us that I'm going to try to incorporate it into our weekly menus. If you have any good recipes I'd be so grateful!! :)
1/4 c. white cornmeal
1/4 c. breadcrumbs
1/2 tsp. salt
1/2 tsp. paprika
1/2 tsp. dried dillweed
1/8 tsp. pepper
1 lb. fish (we'll use talapia)
1/3 c. milk
3 Tbs. butter, melted
Combine first 6 ingredients in a shallow dish. Dip fish fillets in milk, and dredge in cornmeal mixture. Place coated fish in a lightly greased 13x9 pan; drizzle w/ butter.
Bake at 450 degrees for 10 minutes or until fish flakes easily when tested w/ a fork.
Serve w/ lemon wedges and tartar sauce.
Upside down Pizza
2 lbs (I'll only use 1) ground beef
1 c. chopped onion
1 (15 oz) can tomato sauce
1 (1 1/4 oz) envelope spaghetti sauce mix
1 (8 oz) carton sour cream
2 c. (8 oz) shredded mozzarella
1 tube refrigerated crescent rolls
Brown beef and onion in a large skillet over medium high heat, stirring until meant crumbles; drain and return to skillet. Stir in tomato sauce and spaghetti sauce mix; cook over low heat 10 minutes, stirring often.
Spoon beef mixture into a lightly greased 13x9; top w/ sour cream, and sprinkle w/ cheese. Unroll crescent rolls, and place over cheese. Bake, uncovered, at 350 for 20-25 minutes.
