Menu Plan Monday



Monday:
b-oatmeal, raisin toast, fruit
l-pb&j, crackers, fruit (Suzannah fixes lunch on Mondays)
d-sloppy joes, buns, corn, cottage fried potatoes, tomato-cucumber-pepper salad

Tuesday:
b-scrambled eggs, sausage, raisin toast, fruit
l-hm pizza pockets, lo salad
d-Chicken Enchiladas, spanish rice, green salad, chips and guacamole

Wednesday:
b-yogurt, granola, blueberries
d-lo Enchiladas and sides

Thursday:
b-eggs in a basket, fruit
l-chicken salad and crackers
d-@ Mom's...I'll take brownies...my first time to make them homemade?!

Friday:
b-cereal, fruit
l-ham and cheese sandwiches, chips, fruit
d-pizza, veggie dippers and ranch

Saturday:
b-blueberry pancakes, bacon
l-egg salad pita sandwiches, chips, fruit in jello
d-tortellini, Cesar salad, garlic bread

Sunday:
b-raspberry muffins
l-out
d-loaded nachos

Cottage Fried Potatoes
3 Tbs. butter
3 medium potatoes, thinly sliced
1/4 tsp. salt
1/8 tsp. garlic powder
1/8 tsp. pepper
1 small onion, thinly sliced and separated into rings
In a large skillet melt butter (can add more as needed). Layer potatoes into skillet. Sprinkle with salt, garlic powder, and pepper. Cook, covered, over medium heat for 8 minutes. Add onion rings. Cook uncovered, for 8-10 minutes more or till potatoes are tender and browned, turning frequently. Makes 4 servings

We live on homemade brownies around here :) since they cannot be found in a box here I use my dad's recipe that actually has icing on them and they're always a HUGE hit... can't go wrong with brownies I say :)
