lean Menu Plan Monday

We had such a wonderful time at the beach!!! I can't wait to share the pictures w/ you. But for now I have so much to do around the house. We won't be doing school today for sure! Hopefully I'll be able to get to it tomorrow?!

With Suz doing Fall Ball and Piano and Molly Beth starting gymnastics, I've decided that the first week of every month I'm going to try to keep my grocery run around 50 dollars! That way I can use some of the left over money to pay for one of these activities. We'll see how it goes. This is my first week to attempt it. I'll post how much I spend to see how lean I'm able to keep the bill!


b-oatmeal, fruit

l-sandwiches, chips, grapes

d-Addictive Sweet Potato Wraps, tomato-pepper-cucumber salad


b-cereal, fruit

l-tuna melts, cheese crackers, fruit

d-LO Sweet Potato Wraps and salad


b-banana cream pie milkshakes and peanut butter toast

l-noodles w/ butter, green peas, melon balls

d-Grilled Chicken, Ranch Potato Wedges, green beans, hominy


b-fried eggs, toast, fruit

l-black beans and rice

d-@ Mom's


b-yogurt and granola

l-ham and cheese roll ups, cheese crackers, fruit

d-3 Cheese Spaghetti, salad, garlic toast


b-sausage balls and smoothies

l-LO Spaghetti

b-apple cinnamon muffins


d-Garden Chowder, spelt biscuits


1 Tbs olive oil

1 small onion, chopped

2 cloves garlic, minced

3 c. black beans, drained

1 c. water

1 1/2 Tbs chili powder

1 tsp. cumin

2 tsp prepared mustard

pinch of cayenne, to taste

1 1/2 Tbs. soy sauce

2 c. cooked and mashed sweet potatoes

6 tortillas

shredded cheddar cheese

Preheat oven to 350 degrees.

Heat oil, saute onion and garlic till soft. Stir in beans and mash. Gradually add water and heat till warm. Remove from heat and add chili powder, cumin, mustard, cayenne and soy sauce.

Divide potatoes among tortillas and top w/ beans divided evenly among tortillas as well. Sprinkle w/ cheese and wrap burrito style and place in baking dish.

Back 12 minutes.

Top w/ salsa and sour cream and serve. Delicious!
