Menu Plan Monday



MONDAY:
B-toast w/ honey, applesauce
L-HM mac & cheese, veggie dippers
D-LO pizza

TUESDAY:
B-oatmeal and fruit
L-grilled cheese and tomato soup, fruit
D-Quiche, sliced tomatoes, squash casserole

WEDNESDAY:
B-cereal and fruit
L-egg salad, crackers, carrot sticks, slushies
D-Lasagna, salad, French bread w/ roasted garlic and parsley

THURSDAY:
B-yogurt, fruit, raisin toast
L-sandwiches, cheese crackers (attempting a homemade recipe), fruit kabobs
D-@ Mom's

FRIDAY:
B-fried eggs, raisin toast, fruit
L-chicken salad and crackers
D-LO Lasagna

SATURDAY:
B-blueberry pancakes and bacon
L-out
D-Salmon Patties, corn on the cob, salad

SUNDAY:
B-banana muffins
L-out
D-taco salad

Banana Muffins
*these are really tasty and you can't even tell that they are made w/ wheat flour! I throw in 1/2 c. of dark chocolate chips for fun!
-1 1/2 c. whole wheat flour
-1 Tbs. baking powder
-1 tsp. baking soda
-1/2 tsp. salt
-3 bananas, mashed
-3/4 c. sugar
-1 egg
-1/3 c. butter, melted
1. Preheat oven to 350 degrees. Grease muffin tins (12).
2. Sift flour, baking powder, baking soda and salt; set aside.
3. Combine bananas, sugar, egg and butter. Fold in flour mixture and mix till smooth. Pour into muffin tins.
4. Bake 10-15 minutes.

Salmon Patties
* Apparently Salmon Patties have a bad reputation, but our family loves them! It's a great way to get your kiddos to eat fish. Since I'm not a huge fish fan and can't eat tuna while I'm prego Salmon is a great option! I just use the recipe on the back of the Pink Salmon Chicken of the Sea packets.
-1 pouch pink Salmon
-1/4 c. finely chopped green onions (sometimes I just sub. w/ yellow onions b/c I always have them on hand)
-1/4 c. mayonnaise
-1 Tbs. fresh squeezed lemon juice
-1/2 tsp. garlic powder
-dash of cayenne pepper
-1/4 c. finely chopped red bell pepper
-1 medium egg, beaten
-1 c. seasoned bread crumbs
-3 Tbs. butter
-1/4 tsp seasoned salt
Combine first seven ingredients in bowl. Stir in Salmon, egg and 1/3 c. breadcrumbs. Form mixture into 4 balls (I usually make them smaller and end up w/ 6 or 7). Roll salmon balls in remaining breadcrumbs; flatten into cakes about 1/2 in thick. In skillet, melt butter over medium heat. Fry 3-4 minutes per side or until golden brown.

Hope y'all are well. It looks like you've had a busy few weeks. It seems like y'all's birthdays come back to back. I guess once you have 6 people in your family, the odds are that you are celebrating someone's special day about half the year. What a great thing to be in your home: Celebration. You should have a sign made: Welcome to the Neal's House of Celebration
