Chicken Cesar Pitas
*these are really yummy! the recipe if from all recipes.com (although i altered it slightly)....i make a lot of recipes from this site. if you haven't visited it, you need to check it out!!!
-1 lb skinless, boneless chicken breast halves
-1 tsp. garlic powder
-1 tsp. dried thyme
-1 tsp. dried rosemary
-3 slices bread, cut into 1/2 in. cubes
-2 Tbs butter, melted
-1 tsp. garlic salt
-1 tsp. dried parsley
-1/2 lb. bacon
-1 large head Romain lettuce, torn into bite size pieces
-1 (8 oz. bottle of Cesar salad dressing)
-freshly grated Parmesan cheese to taste
-salt and pepper to taste
-1 (10oz) pkg. pocket pita bread, halved
Preheat oven to 350.
Place chicken in a saucepan w/ garlic powder, thyme, and rosemary; add water to cover. Bring to a boil over high heat, then reduce heat to med-low, cover, and simmer until chicken is tender and no longer pink in the center, about 15 minutes. Remove chicken, let cool, and cut into strips.
Meanwhile, toss bread cubes in melted butter. Lay in one layer on baking sheet and sprinkle w/ garlic salt and parsley.
Bake bread cubes in preheated oven for 5 minutes. Turn cubes; sprinkle w/ garlic salt and parsley. Bake another 5-10 minutes until golden brown and crunchy. Remove croutons, and let cool.
Place bacon in a large, deep skillet. Cook over medium high heat until evenly browned and crispy. Remove bacon from skillet, drain on paper towel and crumble.
Combine chicken, bacon, lettuce, and croutons in a large bowl. Toss w/ Cesar salad dressing and Parmesan chesse. Season to taste w/ salt and pepper and toss again. Spoon salad mixture into pita bread halves. (the first time i made these we just used tortillas and they worked great too!)
