Menu Plan Monday


MONDAY:
B-banana bread, milk, cantaloupe
L-spaghetti, salad
D-Grilled veggie sandwiches, corn

TUESDAY:
B-scrambled eggs, raisin toast, fruit
L-grilled cheese, tomato soup
D-beans and rice, greens, cornbread

WEDNESDAY:
B-cereal w/ milk, bananas
L-@ Mom's
D-taco potatoes, strawberry-peach slushies

THURSDAY:
B-fried eggs, toast, fruit
L-sandwiches, pretzels, fruit
D-@ Mom's

FRIDAY:
L-egg salad w/ crackers, carrot sticks
D-spinach pizza (cheese for the littles)

SATURDAY:
B-breakfast burritos (homemade tortillas)
L-LO pizza and veggie dippers
D-Black bean wraps (w/ the rest of the homemade tortillas)

SUNDAY:
B-blueberry muffins
L-quesadillas w/ lo black bean filling (adding shredded mozzarella!)
D-baked potatoes w/ diced tomatoes, steamed broccoli, cheese and ranch

Grilled Veggie Sandwiches
~k, this is my all time favorite summer meal!!! it's SO good for you and kind of fancy for a sandwich!!! i even serve it to my kiddos, i just replace the feta w/ mozzarella!
-1/3 c. mayonnaise
-3 cloves garlic, minced
-1 Tbs. lemon or lime juice
-1/4-1/2 c. balsamic vinegar
-1/8 c. olive oil
-1 1/2 c. sliced bell pepper (i like to use red, orange and/or yellow)
-2 small summer squash, sliced
-1 red or white onion, sliced
-bread of your choice, focassia or 6 burger buns
-1/2 c. crumbled feta cheese
-2-3 tsp. pesto
Slice up veggies and soak in balsamic vinegar for about 30 minutes, or longer if desired. Saute in olive oil. Cut bread in half and layer one side w/ mixture of mayonnaise, garlic and lemon/lime juice, followed by a thin layer of pesto. Top the other side w/ a little may mixture and then the crumbled feta cheese (a little goes a long way!). Broil this open faced in the oven for 3-5 minutes or so (keep your eye on it, it will burn quickly!!). After broiling the bun, layer w/ your sauteed veggies. SOOOOOOOOOOOO delish!!!!

Black Bean Wraps
~we bought a bag of red, orange and yellow bell peppers at Sam's so I'm trying to use them up! Plus, Bethany said something about a black bean burrito that ended up not being as yummy as she's hoped so I thought I'd throw this one out and see what she thought! ;)
-1 c. cooked black beans (or 1 can, drained)
-1 c. diced fresh tomatoes
- 1 c. fresh corn (can use canned)
- 1 c. cucumber, diced
-1/4 c. red onion, diced
-1/2 c. diced pineapple
-1/2 c. diced bell peppers
-1/4 c. chopped herbs (fresh basil, cilantro, parsley, lemon basil, etc.)
-2 Tbs. lime juice
-1-2 cloves of garlic, minced
-Sprinkle of red pepper flakes, salt and pepper to taste
-4 thin slices of chicken or turkey breast (I've never used meat w/ this, we just keep in vegetarian)
-4 tortillas (homemeade is best. i haven't been able to find any w/o partially hydrogenated oils?)
Stir together all ingredients. Lay one slice of meat on each tortilla. Sprinkle veggie mixture on top and roll up. Slice in half and serve.
*we always have leftovers! a great way to serve it is to turn it into a quesadillas by adding a generous sprinkle of mozzarella cheese....it changes it up so much and in some ways I like it better the next day! :)

Yeah, Stacy! Thanks so much for posting your black bean burrito recipe. I froze a lot of the black beans last week so I'll have to pull them out and use them in this recipe. Also, could you email me your tortilla recipe. Thanks so much!
And thanks for the post on praying for our children. I've printed off the list from the blog (neat site!).
