Menu Plan Monday
Monday:
breakfast-oatmeal and fruit
lunch-egg salad, crackers, fruit
dinner-Quick Carbonara, crusty bread, tossed salad
Tuesday:
breakfast-yogurt and granola, fruit
lunch-homemade pizza pockets and veggie dippers (aka. carrots, cucumber, broccoli) and ranch
dinner-Chicken and Wild Rice, corn, spinach salad
Wednesday:
breakfast-peanut butter bread w/ honey, fruit
lunch-@ ELO
dinner-Taco Ring
Thursday:
breakfast-scrambled eggs, bacon, whole wheat sourdough biscuits
lunch-peanut butter and jelly sandwiches on peanut butter bread, cheese crackers, fruit, jello
dinner-@ Mom's
Friday:
breakfast-yogurt and granola, fruit
lunch-homemade Mac-n-cheese, green peas, fruit
Saturday:
breakfast-"Mom is Great Breakfast Cake" and smoothie
lunch-chicken tortilla soup, fruit salad, chips and salsa
dinner-Crockpot Turkey Breast w/ cranberry sauce, mashed potatoes, green beans, tomato-cucumber-pepper salad, left over biscuits
Sunday:
breakfast-chocolate chip muffins, bananas
lunch-OUT
dinner-Laura C.'s bbq meatballs w/ other finger foods while watching the super bowl
Taco Ring
*I'm sure everyone has made this, but just in case a few of you haven't....it's a must try!*
-3/4 lb. ground beef
-1 pkg. taco seasoning
-1 c. shredded cheddar cheese
-2 Tbs. water
-2 pkgs. refrigerated crescent rolls
Preheat oven to 375 degrees.
In medium skillet, cook and stir beef over medium-high heat till browned. Pour off drippings.
Stir in seasoning mix, cheese and water; set aside.
Unroll crescent dough; separate into triangles. Arrange triangles in circle on baking sheet.
Scoop meat mixture evenly onto widest end of each triangle.
Bring outside points of triangles down over filling and tuck under @ center.
Bake 20-25 minutes or until golden brown.
Top w/ salsa, sour cream, chopped lettuce, chopped tomatoes and olives!
Quick Carbonara
*this is a Southern Living recipe that is SO easy and SO good!!!*
-8 oz. spaghetti
-8 slices of bacon
-2/3 chopped green onions
-1 4 oz. can mushrooms
-3 yolks slightly beaten
-1-1 1/2 c. shredded cheddar cheese
-dash of pepper
Cook pasta according to directions. Cook bacon in large skillet till crispy. Remove. Reserve 3 Tbs. of drippings. Coarsely crumble bacon and set aside.
Cook green onions and mushrooms in drippings over med. heat for 2 minutes.
Drain pasta and place in serving bowl.
Stir in egg yolks into hot pasta immediately after draining it.
Stir in bacon, green onions, mushrooms, cheese and pepper.
Serve immediately.

I deserve no mention regarding the meatballs - it was very difficult to open that heavy freezer door at Wal-Mart and pull out the package of pre-made meatballs and dump the BBQ sauce on it!! However, I do want the 'Mom is Great Breakfast Cake' recipe!! Did I miss that - I didn't see the recipe listed!
